Can I still be a firefighter on deferred probation and if so would it make a difference whether it be volunteer or professional?

I am on deferred adjudication probation for aggravated assault with a deadly weapon, and prior to getting arrested I was enrolled in the local fire academy.

Answer

Contact the local fire department and see how your case will affect your potential employment, They will have access to all if your court record, anyway, so don’t be afraid that you are tipping them off to anything they won’t find out about. Better for you to know now what impact your criminal case will have before you spend the time, more and effort in the academy.
