My wife got a ticket and paid a little fine to do defense driving and not get another ticket within a said time. However, she didn’t do the defensive driving course and is now summoned to appear on a date we are not available for.

Your wife received notice to appear in court in order to show cause why a conviction should not be entered on her case and a conviction be reported to the Department of Public Safety. She will have the opportunity to explain her situation to the Judge and request and extension of time to complete the course, but that decision is discretionary with the Judge.
